Spicy Lentil Soup

Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened.

Stir in garlic, cumin, paprika, and cayenne pepper and cook for 1 minute more.

Add lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until lentils are tender.

Stir in lemon juice and season with salt and pepper to taste. Serve hot.
