Creamy Avocado Pasta
A rich and creamy pasta dish that is surprisingly healthy and incredibly delicious.

Ingredients
- 200g spaghetti
- 2 ripe avocados
- 1/2 cup fresh cilantro
- 2 cloves garlic
- Juice of 1 lime
- 1/4 cup olive oil
- Salt and red pepper flakes to taste
- Cherry tomatoes and corn for garnish
Instructions

Cook spaghetti according to package directions. Drain, reserving 1/2 cup of pasta water.

In a blender, combine avocados, cilantro, garlic, lime juice, and olive oil. Blend until smooth.

If the sauce is too thick, add a little reserved pasta water.

Toss the cooked spaghetti with the avocado sauce. Season with salt and red pepper flakes.

Garnish with cherry tomatoes and corn. Serve warm.
